Grown-up Popsicles

Summer quickly approaches and I can tell by the amount of Naughty Bits & Pits I have been using, and by the way my front lawn grass is folding over on itself in protest to the scorching sun.  Our summer starts in Florida in the month of April, literally a week after Easter, and as a mom, I longingly look over at the amount of popsicles my children are consuming without worry of those luscious calories sitting on their bodies like us parents do...I mean the sugar alone in them, you might as well pour a cup of sugar into a bowl and give them a spoon, sooooo that was out for me.  However, I started thinking about how this lady could incorporate the refreshing feeling of a pop without all the sugar, and lets add in some heart healthy benefits...that's right...WINE!



I know I have joked about this before, but I am certain that my entire family that doesn't see me at my house every day, really thinks I am a bonified W-I-N-O.  I assure you I am not, I mean I TRY to drink my 5 ounces of red wine every day, but sometimes I am so tired, or I forget.  But, I am making an effort here people...enter in today's kitchen invention...Wine Pops--- for Adults ONLY!    I took a trip down to the dollar tree today and got four 6 packs of empty popsicle trays.  I loaded those babies up with this delicious concoction and now I am waiting to enjoy one, but they take a while to freeze.  I did however get a chance to sip on the extra mix that didn't fit in the popsicle trays and man, oh man is it delicious.  Here's the recipe:

32 oz. Rose Wine
32 oz. Watermelon Cucumber Lemonade
8 oz strawberries
8 oz vodka
2 Tablespoons Raw Honey

1. Put everything in a blender, pulse till the strawberries are smaller but still chunky/diced
2. Pour into popsicle molds
3. Freeze 4-6 Hours
4. Enjoy with a smile on your face and-- try not to let the kids sneak them.

Now what I didn't tell you is the popsicle molds that I happened to get have these nifty straw things on them so when it starts to melt, you just drink it down...so cool!  I am looking forward to our graduation party tonight where these babies will be served to the adults.
